2013, We looks to have apples ripening on their normal schedule, and the excessive rain in many area is a mixed blessing: the apple become larger, but the water may dilute their flavor. Eating apple is very good for health, but applesauce is best for eat and taste.

The new Crop of apples in at the farmers market, now is the time to make applesauce! It's easy and delicious and takes very little time. Feel free to use a variety of apples in your applesauce, but be sure to taste apple sweetness.

You can see the type of apples determine the amount of sugar needed. If  you try to use a balance of mostly sweet juicy apples, such as Rome Beauties, McIntosh or Fuji s and tart apple, such as a Granny Smith.

New Crop Apple Sauce:

Whole Time -25 minutes

Ingredient

          4 set apples, like Cortland or Macoun
          1/4 cup sugar
          1 small piece Cinnamon stick

METHOD:
  1. First peel and core apples, then cut into large chunks. Put chunks in a wide heavy Saucepan and add sugar, lemon and cinnamon stick. Mix with wooden Spoon , then add 1/2 cup water. 
  2. In a saucepan over medium-high heat and bring to a brisk simmer. Reduce heat to medium-low, cover and cook until apples are soft, about 15-20 minutes. Remove lemon and cinnamon stick, then mash apples with Wooden Spoon, leaving mixture fairly rough. Serve warm, at room temperature or Chilled.
YIELD :

          About 4 cups
